Carrot Cake and Chihuahuas


The snow is still lingering, but its been a great day!

For one thing, we've been playing with my sister's (Ivy) new dog... Toby, a Chihuahua.

Ok. Worst depiction of Toby, as he is a great dog, but he's been wanting to play for the past hour and I haven't gotten a great picture of him yet. (I know, I know. As if we needed another fuzzy thing in our house.) I'll have to snap a few later!

My family is have an impromptu dinner tonight, so after flipping through some cook books, my sister and I decided on a carrot cake recipe. MG got an awesome acorn "cakelette" pan for Christmas from Williams-Sonoma and we thought it would be really cute for the carrot cake.

Didn't it turn out great? I think they are going to be so fun to eat tonight! (And it's carrot cake, so it's going to be a little better for us, right? Are carrots even considered a vegetable or a starch?)

I also made a homemade cream cheese icing for the top. It's going to be delish.

SNOW DAY!!!

It's been a snow day around here!!!! I came home yesterday, hearing all about how horrible the weather was going to be. In Jackson, they were predicting 3-5 inches and in Hattiesburg they were predicting 5-7 inches! I thought they were probably over-exaggerating, but they weren't! We've gotten over 3 inches. For a girl who's lived in Mississippi all her life, this is a big deal. So, I was able to not go to my internship today and enjoy the fluffy stuff.

Truffles loved the snow as well. We would make snow balls and throw them into the snow in the backyard and she would try to find them. When she couldn't find the ball, she would get really frustrated and confused.

This is how covered my car was in snow this morning. (In the picture is the driver-side window. The crack in the middle is the seam where the top of the window and door meet.) It looks like the tops of big, puffy clouds when you are in an airplane!

MG was also really excited about the snow. Here she is having fun in the front yard:



Off to read a book and drink some hot chocolate!

Smoothie Queen


One of the things I've really started to enjoy are smoothies. Mine, however, are a little different. For starters, they are green. I have read a couple food blogging sites and have seen "green monsters," smoothies made with spinach along with other items, mostly fruit.

So, I decided to try it out. Most of the ones I have seen are a bit earthy and the spinach taste sings through.

The mix I have found that works is:

1 banana
1 small (individual) container of low fat cottage cheese
A good handful of spinach
1/4 cup orange pineapple juice (may need more if you like a thinner smoothie)
1 packet of Splenda
4 ice cubes

Blend and enjoy!

I've also variated with raspberries and other fruit. This one is just sweet enough to not taste the spinach, but not terribly sweet either.

Hello again. I've been really pitiful with blog posting lately and for that, I apologize.

A few weeks ago I started my internship and I am really enjoying it! It's definitely fast-paced and different from anything I have ever done before, but it's a nice change.

With that, plus school, things have been insane! I go to school three days a week, intern two days a week, work at the Drip at least once a week, and then have one day off! Pheww. It's crazy, but I love it.

Here are how my cabbage wraps turned out: AWESOME.


I really threw stuff together, so there's not an exact recipe, but we added spinach as a filler along with ground turkey, green onions, and other good stuff. The sauce was simply a small can of tomato sauce.

They were great! You should try them sometime.

Weight loss count: 17 pounds! I'm pretty excited and encouraged by it.
