
Oh, this pizza. I've made it before. (See

here for past posts), but it only gets better and better.

Eggplant and tomato pizza with fresh mozzarella. It's a Pioneer Woman recipe and you can get it
here. My only changes are instead of doing her crust, I use the canned Pillsbury crust and instead of olive oil on my eggplant, I use spray oil.

While her's looks a little "sparse" of toppings, I load on the good stuff. In my opinion, you can't have enough eggplant.
