Chicken Pot Pie

Talk about comfort food. I love chicken pot pie. I know, my Wii age just went up a few decades, but it's so good. After going to an eye doctor appointment, I ran by my parents house for dinner. Yummmm, chicken pot pie! I was glad to see it because I had seen it on Eat Live Run and I was dying to make it myself.

Thing is, it's so classically easy to make.

Chicken Pot Pie
2 rolls of pie crust (1 box)
1 cup chopped, cooked chicken
1 can Veg-All
1 can Cream of Chicken soup (or Cream of Mushroom, if you have it)
Dollop of sour cream (option)
Salt and Pepper

In a bowl, mix chicken, veggies, soup, and salt and pepper to taste. In a round casserole, line the bottom with one of the pie crusts. Add in mixture. Top with other pie crust and poke holes in the crust to vent. Bake for ~1 hour at 350 degrees or until crust is golden brown.

A fun announcement: I am now a Foodbuzz Featured Publisher! Yes, you'll now see some stuff from Foodbuzz on the right side in the near future, but it's an exciting, fun development for me and the blog. Foodbuzz is one of the top food blog community websites with contests, conferences, and a Tastemaker Program (where bloggers are given items to try out and review), so I'm pumped that they wanted to include me as a featured blog!
